Gluten Free Blondies

These are amazingly gooey and rich blondies and super simple to make. Gluten free and low sugar. Sugar free truvia can be used, or just plain brown sugar, both work well. Depending on the peanut butter chips you pick and the choice of sugar these will be sugar free. 

Directions
Preheat oven to 350 and line a 8x8 pan with parchment paper. 
In a large bowl add 2/3 cup salted butter, 1 tsp honey and 1 cup peanut butter and microwave for 1 minute until melted. 
Next add 2 cups truvia brown sugar blend, 1 tsp vanilla, 3 eggs, 1 cup peanut butter chips and mix. 
Add 2 cups superfine almond flour and mix until everything is combined. 
(Mix by hand, using a hand mixer will over blend the dough. Peanut butter chips can be substituted for chocolate chips or sugar free chocolate chips.)  
Bake at 350 for 35-45 min. For a chewy bite bake closer to 35 minutes, 45 minutes will make a more firm cookie.
