Taco Soup (gluten free/keto friendly)

This soup is a quick and easy but fulfilling recipe for any meal occasion! I love making this soup for just myself, or even for a crowd. This recipe will double nicely as well. When I do a double batch I use 1/2 ground beef, 1/2 ground sausage. 

To make you need:
1lb ground beef/chicken/turkey/or pork
8oz cream cheese
1 cup of beef or chicken broth
1/2 cup chopped onion
1 can of diced tomatoes
2tbsp chopped garlic
2tsp ginger paste 
1 packet taco seasoning 
Optional Toppings: 
Avocado, jalapenos, cheese tortilla chips

To make add the ground meat, chopped onion, garlic, and ginger to a pan and cook until the meat is fully cooked (approx 10min). Next, add the taco seasoning, diced tomatoes, and cream cheese to the mix and cook for 5-8 minutes until the tomatoes are soft and cream cheese is mixed in and melted. Last add the broth and cook until the soup is bubbling and starting to thicken (8-10min).
